Customizable Bread Bowl Breakfast

Perfect Pairing:  Refrigerator leftovers

Recently I had a wonderful winter retreat with some of my very best girlfriends at my family’s lake house.  There was a lot of chatting, sipping wine, and relaxing.  We each took charge of a couple of meals and ate really well over the weekend. 
I wanted to do something fun and different for one of the breakfasts and came across an idea for eggs in a bread bowl.  Not only were these guys delicious, they were completely customizable.  I laid out all of the components and let everyone go to town with their creations.

I recommend using a crusty French bread roll for this recipe. You just cut off the top, scoop out the inside, fill it with your favorite ingredients, add an egg or egg white, and bake in the oven until the egg is set.
The Perfect Pairing for this recipe is whatever you have leftover in your refrigerator!  Below is a summary photo of what I used.

I will definitely be making these again!  They are perfect for a big group breakfast.

Customizable Bread Bowl Breakfast

Ingredients:
·         8 crusty bread rolls
·         2 Tb butter, melted
·         Salt and pepper
·         Assorted fillings*
·         8 eggs
Directions:
Preheat your oven to 350 degrees F.  Slice off the top of each roll and scoop out the soft bread inside, leaving the sides of the roll intact.  Brush the inside of each roll with the melted butter and season with salt and pepper.
Let your guests fill the roll with their favorite toppings*.  Crack an egg or egg white on top, season with salt and pepper, and place on a cookie sheet.  Bake for 10-12 minutes and then cover the pan loosely with foil.  Bake an additional 20-25 minutes, or until the egg is just set.
*Grape tomatoes, cilantro, parsley, thyme, shredded cheese, herbed goat cheese, caramelized onions, pre-cooked breakfast potatoes, spinach artichoke dip, deli ham, cooked sausage, crumbled bacon, onions, mushrooms, spinach, feta cheese

  20. I made bread bowls using Longaberger's Low Bowl with the Hearty Beer Bread Mix(you get 4 bread bowls with 1 package) and served Longaberger's White Cheddar Potato soup in them. Everyone LOVED it.

  21. I just made this but I think I over stuffed them with things.. my eggs were running off the side before I could get them into the oven. Next time bigger rolls I think would work best

  23. These are phenomenal! I use cuban dinner rolls cut in half and use the ingredients listed here but also different ones such as broccoli, carrots, spinach, sausage etc. I find that scrambling the eggs instead uses less eggs and you don't have to worry about the whole egg spilling over the top of the roll because it's so stuffed :) thanks for the amazing recipe!

      As far as I can tell all posts regarding this recipe have been subsequent to this post and use the original photos from this post. In any case, I applaud people using the internet to be creative and share their passions with friends. We need more people using the internet to share ideas and creativity and less using it for criticism and negativity.

    3. My mum made us these (in Australia) 30 years ago, long before blogging was happening. Seeing it here brought back some lovely memories and has inspired me to make some for my kids. I doubt very much is original these days, but don't let that get in the way of a rant. :)

  30. So you crack open the egg and add it in the top?? Can you boil it for 8 mins then crack open add it to the top? Just curious :))

    1. Yep, it is that simple! I suppose you could pre-boil the egg if you want it really cooked but you could also leave it in the oven a little longer. Let me know if you try it!
